Keto Idli

Ingredients
  

  • 1 cup Coconut flour
  • 2 cups Paneer (cottage cheese)
  • 20 grams Psyllium husk
  • 1 tsp Baking powder
  • 4 tbsp Olive oil
  • 2 tsp Greek Yogurt (Thick Curd)
  • Salt to taste
  • Water as required

Equipment

  • Instant pot or stove-top pessure cooker

Method
 

  1. In a grinder, add coconut flour, psyllium husk, baking powder and salt. Mix it once.
  2. Add paneer, olive oil and curd. Grind it again.
  3. If it feels a little hard, add a little water and make it soft.
  4. Take small parts of dough and divide it into circular portions.
  5. Flatten the dough a bit and brush them with a little oil.
  6. Put the dough in a microwave idli container and steam for three minutes.
  7. Serve it hot with keto chutney or keto sambhar
