Keto Dosa with Coconut Flour

Ingredients:

1 cup coconut flour
1/2 cup almond flour
1/2 teaspoon salt
1/2 teaspoon baking powder
1/4 teaspoon cumin seeds
1/4 teaspoon coriander seeds
2 tablespoons ghee or melted coconut oil
4 large eggs
1/2 cup water
1/4 cup coconut milk

Instructions:

In a large bowl, whisk together the coconut flour, almond flour, salt, baking powder, cumin seeds, and coriander seeds.
In a separate bowl, beat the eggs, ghee or coconut oil, water, and coconut milk together.
Add the wet ingredients to the dry ingredients and mix until well combined.
Let the batter sit for 5-10 minutes.
Heat a non-stick skillet over medium heat. Grease the skillet with a small amount of ghee or oil.
Pour a small amount of batter (approx. 1/4 cup) onto the skillet and spread into a thin, circular shape, similar to a traditional dosa.
Cook for 2-3 minutes on each side or until the dosa is golden brown and crispy.
Serve the keto dosa hot with your favorite keto-friendly dipping sauce or chutney. Enjoy!
